  • Heat oil in a non-stick saute pan.
  • Cut chicken into bite-size pieces and add to oil and brown.
  • Turn often.
  • Add salt, pepper, garlic to taste.
  • Add cornstarch to a little water, stir and add to chicken.
  • Sprinkle with ginger and add pineapple and mandarin oranges.
  • Stir until mixture begins to thicken and all ingredients are cooked well.
  • Place on a plate and sprinkle over the almonds.
  • Serve immediately.

  2. This is a good dish. I like pineapple with the chicken. Will make again.
     
  3. I was a little leery of mixing pineapple and garlic but to my surprise it was wonderful! This was really easy to make and not too sweet. I served it with an asian-style rice mix.
     
  4. I think this recipe was just ok. I was hoping for a nice burst of flavors from the fruit, but it was very bland tasting and the fruit taste wasn't there really at all. We left the juice in as suggested by another reviewer and even still there wasn't much flavor. We ended up adding a bit of brown sugar and shredded coconut to taste to our individual plates and that made it a bit better, but still not something we would make again.
     
  5. This was great! Very easy and very tasty. I can't wait to make it again with the almonds (we didn't have any on hand). Oh and I left out the chickpeas. I served it over rice. Thanks!!
