  • 1 (18 ounce) box white cake mix
  • 1 pint pineapple sherbet
  • 2 teaspoons almond extract
  • 6 cups coconut

  • Soften the sherbet and combine with the cake mix and the extract.
  • Stir in the coconut.
  • Drop by cookie scoop onto greased baking sheet.
  • Sprinkle with coconut, if desired.
  • Bake at 350 for 10 to 12 minutes.
