Pineapple Dream Squares

These a very sweet and delicious squares, I'm sure everyone will love them. A variation of this is to melt 2 squares semi-sweet chocolate with 1 tsp. vegetable oil. Drizzle over cooled squares. Let chocolate set before cutting into squares.

Ingredients:

Servings: 16

BASE

• cooking spray
• 1 ½ cups all-purpose flour
• ¼ cup brown sugar , lightly packed
• ½ cup butter or ½ cup margarine , softened

TOPPING

• 3 eggs
• 1 cup flaked coconut
• ¾ cup brown sugar , lightly packed
• ¾ cup corn syrup
• 1 (14 ounce) can crushed pineapple , well drained
• 2 tablespoons butter or 2 tablespoons margarine , melted
• 1 teaspoon vanilla extract

Directions:

1. TO MAKE BASE;
2. Preheat oven to 350°F Spray a 9-inch square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly.
3. TO MAKE TOPPING:.
4. In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base.
5. Bake until topping is set but still soft in center, 40-45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated.

Received this exact recipe in a e-mail from eggs.ca. Made as stated ,did not use the chocolate drizzle. They cut better if refrigerated first. The pineapple gives a light taste to this sweet square.Easy to put together, another new family favorite.
