When I was a teen I worked in the kitchen of a local hospital. This was the most popular dessert by patients and staff. The dessert cook refused to part with the recipe, so one day I distracted her while my partner in crime Ed stole the recipe to copy. The drama was well worth it. This is light and delicious. Prep time does not include the jello thickening time nor refrigeration time.

Ingredients Nutrition


  1. Mix eggs, sugar, drained pineapple, and butter.
  2. Cook over medium-low heat until thick, stirring occasionally.
  3. Cool mixture.
  4. Add walnuts and vanilla.
  5. Line a 8x8 square pan bottom with graham crackers.
  6. Covering bottom completely.
  7. Some breaking of the crackers may be required.
  8. Spread pineapple mixture over the crackers.
  9. Top with another layer of crackers, again covering filling completely.
  10. Prepare jello per instructions.
  11. When jello is nearly congealed, whip it until fluffy and pour over crackers.
  12. Refrigerate 4-5 hours before serving.

Excellent dessert! Very light and cool. Greatly appreciated today because it is very hot and humid. The orange Jello nicely balances out the very sweet pineapple filling. Well worth your short jaunt into espionage, Michelle!

This is very similar to a family recipe for "Rapelje Dessert" (probably named after Rapelje, Montana). My great-grandmother's notebook attributes it to a Mrs. Dunn. It has 1/2 c. butter creamed with 1 c. sugar, then twoo beaten egg yolks added. The Jell-O she lists is 1 package lemon plus one package of either strawberry or raspberry.

I can't say that I love it or not, because when I first tasted it I thought, yuck! But then I found myself going back for a little more! It definitely has a "funky" taste to it. But I would like to try it again for company just to see someone else's reaction. Thanks for an unusual recipe.
