We really enjoyed this! I halved the recipe, used brown sugar, grated the ginger, added about an 1/8 of a teaspoon of cinnamon and served it warm over vanilla ice cream. So, so good! Thanks for posting the recipe.
FANNNNNTASTIC!! The only changes I made were to add the ginger to the butter 1st to soften & infuse more. And I cut the sugar by half; the pineapple was sweet enough. I served this with Caribbean Grilled Pork and Onions & they went wonderfully together. This would be equally excellent as a dessert topping. Quick & easy. Definitely a keeper! I made this using a whole pineapple & must say that there are a least 6, & perhaps more like 8, servings from this recipe, especially if you have it for dessert after a big meal or as topping on a slice of pound cake (or ice cream)! However, that aside, this compote is delicious & well worth making again!! Definitely a winner! Thanks for sharing the recipe! [Made & reviewed in the Almost 5 Special Event]
I used a half of a fresh pineapple to make this and followed the directions as written. Very tasty! I used it as a topping on waffles with a layer of cream cheese and some whipped topping. Next time I'll try it on ice cream as part of a banana split. Thanks for sharing. Made for ZWT7-Pacific Islands.
I reduced the recipe to 2 servings and used brown sugar also. We really enjoyed the flavor of this over vanilla ice cream, though I know it wold have been great by itself also. Thanks for sharing, Boomette!
Yum!! The sugar and butter caramelized to make a nice golden glaze and the ginger adds a nice dimension of flavor. Made two minor changes one was to cut recipe in half and the other was to cut pineapple into large chunks verse dicing. Thanks for the post.
I had frozen pineapple that I used for this. Using I`d say 1/4 cup of pineapple. I did use brown sugar, and topped with ginger that I keep in the freezer so it grates like snow. I also topped with a touch of cinnamon. Skipped the salt. Served over oatmeal for my Sunday breakfast. Thanks for the healthy treat.
