Pineapple - Coconut Muffins

  • Preheat oven to 350F, line 2 muffin pans with paper cups.
  • In a large bowl, beat butter and sugar until pale and fluffy; add eggs and vanilla, and beat well.
  • Combine salt, baking powder, coconut, and flour.
  • Drain and chop pineapple, reserving juice (about 7 ounces).
  • Add the flour mixture to the butter mixture alternately with the reserved juice.
  • Fold in pineapple, and fill muffin cups 2/3 full.
  • Bake for 20-25 minutes.
  • Note: Sprinkle sugar on top of muffins for crunchy muffin tops.

  1. I thought these muffins were really good! I followed the advice in one of the reviews that suggested reducing the sugar since using sweetened coconut & adding a bit more pineapple juice....they were really moist and delicious! I'm thinking they could almost pass as a cupcake if you frosted them with cream cheese frosting!
     
  2. I made 1.5 x the recipe, but ended up with only 18 regular sized muffins. I used sweetened flaked coconut, so reduced the sugar. Also, I ran out of flour, so didn't add the extra pineapple juice. Like a previous reviewer, I sprinkled coconut on the muffins 10 minutes into baking. Overall these were good, but next time I'll add more sugar, and make sure I have more flour on hand. Thanks for the great recipe.

  5. These are fabulous! I followed the recipe exactly and they turned out very moist, but not too dense, which I was concerned about. They had the best flavor which I think can be attributed to the pineapple juice in the batter. Yum! My roommate ate a couple right out of the oven and kept burning his tongue but he wouldn't stop eating them!

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it. Sigh.. A few days ago he came up with this song, so sing along to the tune of "Old McDonald" : Old McTariq Laq Laq Laq E I E I OOOOOO LOL I thought it was the cutest thing :-) When I'm not running around after my son, or cleaning up the mess he makes wherever he goes, I cook and bake (my husband loves the blueberry muffins I make) and I love trying new recipes .. I also love to read, and collect sci-fi/fantasy novels .. I have over 500 books and still counting ..
