The was the perfect dessert for our Mother's Day cook-out!!! I did save some time by purchasing a shortbread crust at the store but, it was still a wonderful dessert! Everyone raved!!!

Tropical goodness in a pie plate! Made this yesterday for Sunday evening dessert. It was soooo good and the crust! Wow, it was fantastic. The whole family loved it, even those not terribly fond of coconut. Only needed 12-14 cookies to make 1.5 cups for the crust and only used 1/2 cup coconut in the pudding mixture. My husband is a take it or leave it coconut eater so I didn't want to overwhelm him with it. Turned out, to me anyway, 1/2 cup gave it just the right balance of creamy pudding to coconut. Thanks so much for the great recipe. I can tell I'll be making this one over and over again.

Have made this pie twice now. Very tasty. Had everyone at two recently attended events asking for the recipe. 20 cookies gave me a little over 2 cups of crumbs. Used 15 the next time and was just right. I also added some toasted coconut to the top of the pie. It gave it a little nicer presentation. Great recipe!
This could not have been any better...or easier for that matter! I made this on Mother's Day and it was a huge hit!! If you love banana cream pie and coconut cream pie this is the pie for you!!! I had a little trouble w/the crust wanting to slide down the sides of the pie plate, so when I took it out of the oven, I reshaped it while it was still pliable and then put it back in the oven for a couple more minutes. Other than that...perfection!!! Thank you for posting this recipe!
