Pineapple Chicken

  • Chop onion into a large dice. Cut the dates finely, set aside.
  • In a frying pan on high heat cook onions, raisins, and water.
  • Cut chicken into bite size pieces.
  • When the water has mostly evaporated add the chicken cook for a couple minutes.
  • Add a couple tablespoons of water to pan - this will "deglaze" the pan.
  • Add the salt, lemon juice, and dates.
  • Add the pineapple and juice. Lower to medium heat and cook for a couple more minutes to make sure chicken is cooked through. If necessary add a bit more pineapple juice or water.
  • Serve warm.
