This sounds so weird...weird enough it's probably good!!! Found the recipe on Epicurious site, recipe taken out of Pamela Anderson Cookbook.
- 2 cups fresh pineapple, cubed
- 2 cups celery, chopped
- 1⁄2 cup water
- 1⁄2 cup fresh cilantro, firmly packed
- 3 tablespoons sugar
- Purée ingredients in a blender until smooth.
- Pour mixture through a fine-mesh sieve, pressing hard on solids, then discarding them.
- Serve over ice.
I don't know that I would have called it punch, and it involves a little work, and but the results are worth it. I was suprised how well the ingredients went together in this refreshing and healthy green-colored drink. Cilantro really complimets the pineapple. Sweet and a little tangy with a bite from the celery. I would say the serving size is off, the recipe makes about half what you'd expect. I did try to drink this without straining...umm, don't try that at home. Thanks, Katie, I love an unusual recipe!
