Got this idea from Melissa D'Arabian. She made it with grapefruit! It is light and refreshing.
- 1⁄4 fresh pineapple, chopped into tidbit size
- 1 cup sliced celery, including some leaves
- 10 ripe olives, sliced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Splenda sugar substitute or sugar
- 1 green onion, white and green part, sliced
- salt and pepper
- Mix everything together.
- This is a fast salad!
