I am not a veggie person, but have been looking for a way to get my veggie in. This is a good smoothie.
- 1⁄2 cup pineapple chunk
- 1 cup soymilk (vanilla or regular)
- 1 carrot, peeled and sliced
- 1⁄3 cup pineapple juice
- Place all ingredients in blender and blend until smooth.
Sounds like a strange combo, but this smoothie was delicious! The only thing I changed was to add some ice into the blender.
My first carrot in a smoothie and it turned out delicious! The carrot texture reminded me of coconut (which goes so well with pineapple). The drizzle of honey adds a nice sweetness. Thanks Seesko for motivating me to include a veggie in the morning! Roxygirl
