- 1 yellow cake mix (inexpensive)
- water, per cake mix directions, minus 1/3 cup
- 1⁄2 cup butter, softened, per cake mix directions
- 3 eggs, per cake mix directions
- 1 (8 ounce) can crushed pineapple, undrained
directions
- # Follow direction on cake mix package with one exception-- decrease water by 1/3 cup.
- Fold in crushed pineapple, including juice.
- Bake according to cake mix directions.
- Cool.
- Sprinkle 10X sugar on top or chocolate frosting.

I made this for my hubby's birthday cake and he loved it. I had a large can of pineapple, so I drained it completely, and used the juice in place of the water the cake mix called for. I also added about 11 oz of crushed pineapple (half of the big can) to the batter. I served it with cream cheese icing, to which I added the remainder of the crushed pineapple. I don't like fruity cake, so I only had a few bites! However, the rest of the family (parents, brother and his parents) and my husband. They raved! The five star rating comes from my husband on taste, and from me for ease of making and clarity of instructions! Thanks Colleen! :)

Colleen passed away from cancer, after a 3 year long battle, on April 3, 2008. She was a fighter and did so until the end. She loved to cook and enjoyed Recipezaar. She has left behind a husband, who has always enjoyed helping out in the kitchen. She is survived by her daughter Steph, son in law Chris, a 3 y/o granddaughter Olivia, who she adored. Steph is pregnant with Colleen's 2nd grandchild, a girl, who is due in Feburary, which was a miracle suprise to her parents and most likely, a gift from Colleen. Her family wishes you to enjoy her recipes.
