This cake was very good. It went together really quickly and the icing was super easy as well. The cake itself was incredibly moist, almost a spongy texture. I was a little confused about pouring the icing over top of the cake, because really, the icing seemed like it was more of a sauce. I put the cake on a cake plate and I did pour some of the icing over top of it, and then I served the remaining by spooning it over top of the individual servings of cake. My husband and children absolutely loved it and I'll be making it again.

  1. Preheat oven to 350°.
  2. Sift together flour, sugar and soda.
  3. Mix in eggs and pineapple.
  4. Pour into a greased bundt pan and bake for 1 hour at 350°F or until done all the way through.
  5. Place all icing ingredients into a sauce pan and bring to a boil.
  6. Turn down heat and simmer for 4 minutes.
  7. Pour icing over warm cake.
