A refreshing and filling vegetarian tropical salad.
- 1⁄3 medium avocado
- 1⁄3 cup fresh pineapple chunk
- 3⁄4 cup Bulgar wheat, cooked and (chilled)
- 1⁄4 cup red bell pepper, chopped
- 2 tablespoons celery, chopped
- 1 scallion, thinly sliced
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- Peel and cube avocado and stir in pineapple. Pineapple will prevent avocado discoloring. Combine ingredients and toss.
