  • Preheat oven to 350.
  • Put cubed bread into a greased 2-quart casserole dish.
  • Add sugar to beaten eggs; add pineapple and stir well.
  • Add melted butter and mix again.
  • Pour mixture over bread cubes and stir to coat well.
  • Bake for 40-60 minutes.
  • This casserole is good with ham or served as a breakfast casserole.

  1. This was really yummy and quick to put together. I made it as written other than making a half-recipe instead of full quantity. I used plain old whole wheat, store-bought, sandwich bread. Had my doubts about using it for something like this, but it tasted great. I bet it would be even better with a better quality bread. This reminds me of bread pudding in taste and texture, but not quite as wet/custardy as a true bread pudding. This made a very enjoyable breakfast partnered with some soy sausage and fresh fruit. Thank you for contributing such a great recipe!
     
  2. Oh my, this was good. I should probably be embarrassed to admit that I devoured 2/3 of the casserole dish when it came out of the oven.... I couldn't stop eating. I took a suggestion from another review and dropped it down to 3 eggs. I used plain old white sandwich bread, but I'd love to make it for a brunch w/a special bread (maybe challah?).
     
  3. As soon as I saw this recipe, I knew that I had to try it and that it would be great. It is! It's very easy to prepare and is delicious. My only change was to add a little more bread for the amount of liquid, which turned out well. This smelled so good that I could hardly wait for it to finish baking before digging in. This is a keeper that I can't wait to share with family and friends. I'll be making this again and again, maybe next time with cubed ham in it. It was a gloomy day, good for staying in and baking and this certainly made my day a lot brighter and sweeter! Thanks for a really good recipe!
     
  4. Tasty, simple and easy. This is a nice tasting breakfast dish. I thought the pineapple would be overpowering but it wasn't. The egg had a stronger taste than the pineapple, which added some sweetness. I made this in a 2.5L dish (don't have 2 qt one) and it came to the top while baking (but settles once out of the oven). I used egg twist bread and baked for 50 minutes, when the top was getting browned. Next time I will use at least 1 fewer eggs and probably less butter. Thanks.

After being, "OzCoMartha" because of having lived for three years in Australia and then moving to Colorado, I have decided to "turn over a new leaf." I chose this name because many moons ago I used to be able to "chirp" like a cricket and the "silent" refers to the present time when I'm taking a break...But, perhaps after a season, however long I decide that needs to be, I may be back and then I will fill in more details about myself...
