I have made this several times throughout the years and it is the ONLY vegetarian meal my carnivore husband actually requests! Our favorite enchilada recipe by far! Thanks for the recipe!

I enjoyed these as a meatless option. My husband found them a bit too sweet, but he's a total meat and potatoes guy, so I'm not surprised. I would definitely make them again for myself or for a girls night.

This is such a great recipe. One of the best that I have found! I was looking for something with a lot of fruit and veggies that doesn't cost a lot to make. My boyfriend loved it as well--and he doesn't like fruit or vegetables.

One of the best recipes I've tried this year. Only change I made was reduced cilantro to 2 T (not a big fan). This has great flavor, very filling and healthy. Will definitely make this again. Thanks for posting.

The enchiladas turned out a little dry and tasteless. I sticked to the recipe but somehow everything fell apart on the plate because it was so dry. There is nothing for sauce in the recipe, how do you get the enchiladas moist?<br/>The low-fat sour cream stayed in the form of the container and was awful. Tasted like gelatine somehow. Sadly we didn't have an alternative at home.

Soo good. I actually doubled the black beans alongside a 15 oz can of pineapple. Next time I think I'll stick to the recipe as written. I was worried it would be too sweet yet I found myself wanted more pineapple in each bite with the added beans. Served with Spanish Rice. With the extra filling I plan to make Black Bean and Pineapple Quesadillas! Thank you, mrib! [Made for Name That Ingredient]

These enchiladas are very good. We made a couple of changes. Used one small onion. I just felt like the onion would have overtaken the recipe. I used 2 cans of enchilada sauce. It wasn't soupy at all. I also used corn tortillas. This is just person preference. Also, a little cayenne pepper. My new vegetarian enchilada recipe. Yum.

Wonderful, wonderful! I used refried beans instead of black beans. Probably didn't look as nice, but still delicious! (omitted the cilantro)
