      We're trying to incorporate fewer meat meals in our diet. The important thing when selecting a dish is that it's hearty enough that you don't miss the meat. Not only did I NOT miss the meat, I adored the fusion of flavors and texture. Fantastic. I'm coming back to this one.

      I have made this 3 or 4 times in the past few months and everyone in the house loves it. (Even the 1-year-old who is still not so sure about certain foods gobbles it up.) Once I was out of red pepper when making it, and substituted frozen corn, which works nicely.

      OMGosh, these are good. I did not miss the meat at all. In fact I think if I didnt know it, I wouldnt have guessed it. My only difference was to use dried cilantro, and I added cumin and smoked paprika to the mixture, along with orange, green, and & red peppers - all in small quantities.

      WOW!! This was a great surprise. I actually added some ground beef because my DH can not understand a meal without meat. But after i made it he actually said he would eat this again without the meat. i was shocked. This really is a great filling, i would actually use this filling for a salsa. it was that good!! THANK YOU mrib, i will definitely make this again and again. i'm forwarding this recipe to my family and friends too.

      I loved this recipe! I don't like things really hot/spicy so I skipped the chilies. I also used enchilada sauce that I made from a recipe on here. I didn't even bother using tortillas, just the filling and it was delicious. I'll be making this often.

      Great recipe, bravo mrib! The pineapple/black bean ratio is perfect. I added 1tsp of coriander and cumin to the veggies and used homemade green enchilada sauce (#55478). Next time I'll skip the cheese in the filling and just sprinkle a little Mexican blend on top to save calories & trim fat content. Thanks!

      Tasted great - even better than expected. Made these layered-style with corn tortillas. Used 505 green chile sauce in place of enchilada sauce. Only put cheese on one half, for my BF. They were a tiny bit on the dry side, but since I changed the overall quantity, this may have been my fault. Nice light and healthy change from more traditional Mexican and Tex-Mex food. Easy and economical, too.

      Yummm!!! These were very tasty. I followed other reviewers' suggestions and doubled the black beans and cut down on the pineapple. I also added cumin, coriander, and a bit of cayenne, and used hot enchilada sauce. Finally, I subbed pepper jack cheese for the cheddar in the filling, and sprinkled cheddar on top. These came together really quickly and were easy to make. However next time I think I will go with the full 20 oz of pineapple. It may be because I used hot enchilada sauce, but it was hard to get the pineapple flavor. I will definitely be making these again!

      I really thought these were good, and they appealed to a dinner party of five adults and three toddlers with widely varying palates! I took the advice of others and, doubled the recipe but used only one can of pineapple. I really loved the combination of the pineapple juice and enchilada sauce. Thanks for posting!       Let me start by saying I liked these. They tasted just fine, but I don't think they were spectacular. I made some as the recipe is written and added shredded pork to others. I drenched mine with enchilada sauce like I always do, but these just seemed so soggy. I expected more flavor and was a little disappointed. I enjoyed my meal, but probably won't make again

      I used to go to a mexican restaurant that did black bean and pineapple quesadillas that i LOVED, and when I was in the mood for enchiladas and saw these, I knew I had to try them... especially as a vegetarian! They are amazing - my meat-eating husband has requested I make them again immediately and this time - double the recipe!!
