    This is our favorite banana loaf.A moist tender loaf with bits of crushed pineapple throughout. This recipe was found in a Robin Hood booklet many years ago. I have been making this loaf for many years. yield is 2 loaves.

    Ingredients:

    Directions:

    1. 1
      Combine first 5 ingredients.
    2. 2
      Beat remaining ingredients together in a large bowl until blended.
    3. 3
      Add dry ingredients stirring until thoroughly combined.
    4. 4
      Spread in two greased 81/2x41/2 loaf pans dividing evenly.
    5. 5
      Bake at 350°F for 60-70 minutes or until toothpick inserted in centre comes out clean.

      Cool 15 minutes in pan then remove to rack to cool completely.

      I thought this would be better than what it was. The pineapple was barely detectable. I used walnuts. One loaf I added coconut.

      Great bread - lovely combination of flavors! I love the extra burst of flavor from the pineapple. I omitted the nuts from the first loaf, but added a half cup of macadamia nuts to the second. Both ways were excellent! Thanks for sharing!

      Made as *pressie* for the Dec Aussie/NZ Recipe Swap ~ I need a 10 star rating for these moist & flavourful sweet loaves of goodness! I chose this recipe because we love banana bread, I planned to include it in our holiday food gift baskets for DHs family & I promised a friend I would help w/food to serve at her holiday open house. I had 2 loaf pans but neither was the right size per the recipe, nor were they the same size. I used them anyway, filled them to the same level, baked them both the full 70 min & they were perfect. I did not use the opt nuts due to allergy issues of a family member. I esp like that this recipe makes 2 loaves as I can make 1 more batch & have all my needs covered + some for us. After all, we did have to do a taste test ~ right? Thx for sharing this recipe w/us. It will be made again soon & many times in our future. ~ *Edited to Add* Posted another pic of this treat ~ sliced, plated & ready to be served at the holiday open house my friend is hosting. It is in my freezer now, minus the Christmas deco. :-)
