Pineapple and Mandarin Orange Dessert

ingredients
- 1 can pineapple chunk, in own juice,drained
- 1 can mandarin orange segments, drained
- 226.79 g container Cool Whip Lite, thawed
- 85.04 g package instant pudding mix (vanilla and banana cream are the best)
directions
- Mix pudding mix and cool whip together well, fold in drained fruit.
- Chill for 2-3 hours before serving.
- Great for diabetics!

Very well received by a bookclub earlier today ... I did make a couple of changes to the recipe though since I was not sure the volume of the fruit containers. * 20oz can pineapple tidbits & 14oz can sliced peaches both in light syrup (mandrain oranges did not look good when I opened the can -- hahaha). I diced up the peache slices * used two (2) 1oz packages of sugar-free vanilla pudding Put the pudding mix into dish then added pineapple including juice and mixed well -- then added diced up peaches plus juice and again mixed well. Consistency looked good to me so then added the cool whip -- and for "good measure" added 2/3 cup of coconut! Put in refrig overnight and was great (to me & others) late morning! Was a VERY nice firm consistency too!

This was very quick and easy, and the kids like it. Apparently, I did something wrong, however. I had to guess what size cans of fruit to use (I used the larger ones, 15 oz. mandarin oranges and 20 oz. pineapple chunks), and there was nowhere near the ratio of fruit to Cool Whip I would have liked. I think if I make this again I'll use two large cans of each.
