Pineapple and Macadamia Shortbread

  • 2 12 cups flour
  • 13 cup packed brown sugar
  • 1 cup cold butter
  • 14 cup finely chopped macadamia nuts
  • 14 cup chopped candied pineapple


  1. preheat oven to 325.
  2. combine flour and sugar.
  3. cut in butter until mixture resembles fine crumbs and starts to cling.
  4. stir in nuts and pineapple.
  5. form into ball, knead until smooth.
  6. on a lightly floured surface roll dough 1/4 inch thick.
  7. using a 2 inch cookie cutter cut into shapes.
  8. reroll scrapes only twice.
  9. place 1 inch apart on ungreased cookie sheet.
  10. bake 15-20 minutes.
  11. transfer to wire rack.
