Pineapple and Coconut Bread Loaf

"This is easy to put together, and tasty as ever! This loaf is moist and dense with a great texture. These can be made into muffins also, but the cooking time may significantly decrease."

  1. Made as muffins, baked for 20 minutes, came out perfect, rave reviews from hubby. Very moist, but not crumbly. Will toast coconut before adding next time, also add a few toasted pecans -- that can't be bad.

  2. This is easy to make and very good. It does crumble easily.

  3. I love this recipe and make it all the time! I use less coconut that what the recipe calls for. One time I tried it with some chopped walnuts and it was fabulous!

  4. This is excellent! Next time I will toast some coconut for the tops, I did make this into muffins with great results...20-25 mins bake time was perfect! Thanks so much!

  5. This bread is so good, made it this morning and already it is half gone. I used Splenda instead of the sugar as I am a diabetic. Definitely a keeper, will make this often. Thanks for posting this wonderful recipe.

I love to bake. I bring most of my goods to work with me, where criticism is wanted but rarely given.(everyone is too nice! :-D) I enjoy coming up with new variations of ordinary recipes, and sharing them with people who appreciate it! <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/IWasAdoptedfall08.jpg" border="0" alt="Photobucket"> <img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/PACsticker-Adopted.jpg">
