This is delicious! I froze some pineapple juice and partially froze pineapple chunks. Threw all in a blender and added rum. I agree... you have a pineapple mojito here ;) YUMO. Thanks for sharing... (Made for Bevy Tag 4/08) Cheers ~V

Yet another interesting way to put together a smoothie! Loved the flavor combo ~ Pineapple, lime & mint! After cutting up the pineapple, I put the chunks in the freezer until ice just started to form, then went from there, using only a few ice cubes during the finale ~ Very refreshing!! This is wonderful. I did use 1/2 pineapple chucnks and juicealong with ice in the blender adding rum and topped in a glass full of ice. Just like a pineapple mojito. Thanks!

Loved it ! Smooth and fresh ! I used my stick blender on the pineapple and mint and added the juice of a fresh lime. The mint and the lime balance out the pineapple flavour so this is not too overwhelingly "pineapple", and you could happily make yourself comfortable with the jug of this on a long hot summers day. Please see my rating system: 4 lovely stars for a refreshing recipe that I will keep for summer. Thanks!
