Super easy! Perfectly fluffy, tasty rice pilaf!
I've made this a few times and it comes out perfect every time. It's a keeper and goes with a lot of different dishes. Love it.
I usually find rice pilafs to be disappointingly bland, but this was wonderfully flavorful. I loved that it finishes in the oven - the rice was perfectly cooked & fluffy! Thanks mikekey!

I made tis with quinoa instead of rice, and loved the combination of spices and pine nuts - I love how the pine nuts taste cooked. For ZWT8
This was an easy and different way to cook rice. I did reduce the pine nuts by about half. The recipe maked 4 nice side servings. There are leftovers and I plan to add a jalapeno and compare the 2. Made for ZWT8.
Made for ZWT-8 & I'm glad this recipe has been oft-reviewed in its written form cuz I'm about to report a different version DH requested. On the dinner menu tonite was a combo of 2 lobster dishes picked to celebrate our 9th wedding anniversary (on 7/30 & delayed to the start of the new regions). Lobster needs something spec to accompany it, DH is esp fond of couscous & he asked if your recipe could be made using it. So - I used unsalted homemade stock (DH is salt-restricted) & then added Old Bay Seasoning for a 68% reduction of sodium from salt content. The rest of the prep was easy-peasy & the outcome delicious w/our lobster. I added pine nuts to my portion only as DH also cannot eat nuts - Too bad cuz I loved it w/the pine nuts. This is an extremely tasty and flavourful pilaf! I've never used oregano in pilaf, it really was a perfect match. I used home made chicken stock and fresh oregano. Will make this pilaf again often, it goes so well as a side dish for all kinds of N*A*M*E recipes. Thanks for posting!

Good. This went well with our dinner tonight, swapping out the oregano for dried parsley. We had, Kebab Iroog, a fresh salad with Afghan Salad Dressing and Beet Root and Apple Raita. It was a great meal masha Allah. For this recipe I used extra virgin olive oil, a little extra pressed garlic, white Basmati rice, which I rinsed until the water ran clear, maybe half the amount of pine nuts as I ran out, homemade chicken stock, plus the ground cumin. I would make this again with the amount of pine nuts called for and would like to try it with the oregano sometime.
