Very tasty healthy dessert & easy to make. I did use the pineapple option but DH thought he would prefer the mandarin oranges better. Made for ZWT 7

I went with the pineapple option and what a lovely light beakfast this was. I added a bit of coconut extract to the vanilla yogurt to hepl cary the flavor through and that worked beautifully. Made for Witchin Kitchen, zwt7.

Excellent!! Quick and easy Island tastes delight that works as a breakfast, snack or desert. Made as written using the mandarin orange option because that is what I had on hand and cannot wait to try the pineapple option. Thanks for the post.

Wonderful....Used 1/4 c. mandarin oranges and 1/4 c. pineapple. Instead of toasted coconut, I used a tiny bit of coconut extract. Thanks you sharing.

Lori thank you for a wonderful breakfast this morning! I love mandarin oranges so I used those and did not toast the coconut. Layered the oranges between the yogurt layers and sprinkled coconut on top. Very easy, quick, and tastes so good!

These are fantastic! I skipped the coconut. DD kept saying "num num" :) This is something I will put on our regular rotation. I can even serve this to DH as a weeknight (healthy!) dessert! Thanks.
