This recipe is from "Any Blonde Can Cook."
- 1 (18 ounce) box pineapple cake mix
- 2 eggs
- 1⁄2 cup oil
- 1 cup water
- 1 cup coconut
- 1 cup pecans, chopped
- Mix all ingredients together.
- Pour into 2 loaf pans.
- Bake at 350 degrees for 25-30 minutes.
I had a box of pineapple cake mix and wanted to do something easy and different from the usual pineapple upside-down cake. I had all the ingredients on hand and it took no time or effort at all to mix up. The flavors are very subtle and it reminds me of banana bread. I added a teaspoon to up the tropical flavor. One loaf was sliced warm-yumm and the other was tucked away in the freezer to enjoy at a later time- Thanks for a really easy good recipe!
