Creamy and tropical, this classic drink is perfect for Hawaiian and Caribbean parties as well as summertime entertaining.
- 70.87 g light rum
- 85.04 g pineapple juice
- 56.69 g cream of coconut
- 177.44 ml crushed ice
- pineapple chunk (for garnish)
- Place ingredients in blender, reserving pineapple chunks for garnish, and process until smooth, about 10-15 seconds.
- Pour into a chilled glass and garnish with reserved pineapple chunks, if desired.

This was a very tasty late night drink that I just served on the rocks. I did have to add more pineapple juice, 3 ounces. I like my drinks on the weak side.
