GOT MILK?? Naw...but I got beer! This solves the problem of what to do with that little dab of flat beer left in the bottles from last night.

I would have never thought of using beer for biscuits, but this recipe produced really nice, tender biscuits, with a really interesting depth of flavor from the beer. There wasn't a particular style of beer suggested, so I used an Abita Wheat beer that happened to be in the fridge. I don't care for lard, so I used butter flavored vegetable shortening. Delicious.

  1. Combine flour sugar and salt in a large bowl.
  2. Add the shortening or lard and cut into dry ingredients with a fork or your hands.
  3. Flat beer -- beer that has lost it's fizz -- works best! Otherwise just let the beer get to room temperature; add 1/2 to 3/4 cup to mix.
  4. Knead the dough just enough to blend -- over mixing will make it tough.
  5. Flour a flat surface and spread the dough to a one inch thickness.
  6. Cut your biscuits out.
  7. Bake at 425°F for about 10 minutes or until brown.
