A great dessert, especially in the summer.
- 1 (18 ounce) box yellow cake mix
- 4 eggs
- 3⁄4 cup salad oil
- 11 ounces mandarin oranges, undrained
- 16 ounces crushed pineapple, slightly drained
- 16 ounces Cool Whip
- 3 ounces instant vanilla pudding
- maraschino cherry, if desired
- Mix cake mix, eggs, oil and oranges.
- Pour into 3 or 4 greased layer cake pans.
- Bake at 350 degrees for 15 minutes, cool on racks.
- Mix pineapple, cool whip and pudding.
- Fill and frost.
- Decorate with coconut and cherries, or not.
I made this last night and I added fruit cocktail into the cake mix with the mandarin oranges and wow what an umph it made everyone loved it and I remember something similar that my granny made as well , thanks for the recipe and yes a whole can drained of fruit cocktail and it was wow . thanks again for an awesome recipe .
Everyone loved this cake and it was so pretty! I modified it based on what I had on hand and also based on another interesting recipe for a cake of the same name. First of all, I didn't have mandarin oranges, so I used crushed pineapple. Second of all, I didn't have vanilla pudding so I used lemon pudding. Thirdly, I'm not a big fan of cool whip, so I used real whipping cream. I didn't know if that would affect the integrity of the texture... so I made the topping/filling right before serving it. Fourthly, I added a sprinkling of toasted pecans (for those who wanted it)... that was really yummy. As in another recipe, I decorated the cake with cut fruit (this time just with strawberry slices, I wanted to use kiwi and blueberries too, but all I had was strawberries). It was so pretty... definitely special occasion worthy (our celebration was Mother's Day). Also, I wasn't serving a large crowd and didn't want a bunch of leftover cake, so I cut everything in half (by using a digital scale), and just for fun, I split the one layer in two just so I could put the topping/filling in a middle layer. It fed 8 people and there were a couple of slices left over. I will definitely make this again and may do it with my modifications since it was sooo good. : ) Thanks! Yummmm! I made this last night for a dinner party and everyone loved it. I used 1/2 unsweetened applesauce and 1/2 oil, drained the mand juice into the cake mix, added eggs, mixed well, then added oranges last and only mixed about 30-45 sec to break up a little but still leave some good size pieces. Used 2- 8" round cake pans. I mixed 1 1/2 packages pudding with 20 oz pineapple undrained then folded in 16 oz cool whip, it turned out great. Also, I sprinkled a handful of chopped pecans on top of the bottom layer and decorated the outside with them. Results were great, hope this helps!
