Picky Mike's Goulash

"Quick and easy to make. I especially like a goulash in the winter as an alternative to chili. My husband is a VERY PICKY eater, but he loves this dish. This goulash is best on the second day and is great with a salad and garlic bread."

ingredients

  • 1 1 lb ground turkey or 1 lb ground chicken, browned (I prefer lean turkey)
  • 12 cup chopped onion, sauted with the meat
  • 2 (15 ounce) cans mixed vegetables (OR 1 can cut greenbeans with juice and 1 can whole kernel corn with juice)
  • 1 (15 ounce) can diced tomatoes (I prefer Hunt's with spices already in it for more flavor)
  • 1 (15 ounce) can tomato sauce (I prefer Hunt's with spices already in it for more flavor)
  • 12 - 34 cup small elbow macaroni (or dice 1 extra large potatoe or 2 medium potatoes instead of noodles)
  • 34 cup water (I use one of the empty veg. cans)
  • salt and pepper (I prefer the grinder kind of sea salt and black pepper or mixed pepper)

directions

  • In a stew or dutch-oven pot, saute meat and chopped onions until brown.
  • Pour off any grease (I use lean turkey, so I don't have extra grease).
  • Add to browned meat& onions all of the remaining ingredients (the order doesn't matter).
  • Stir and bring to boil, then turn down to medium-low or simmer and put lid on pot.
  • Simmer 20 minutes or until noodles (or potatoes) are done.
  • Stir occasionally to keep from sticking to bottom of pot.

  3. Hey! This morning I had to find a recipe that was "soupish" using ground beef that I could make ahead of time. You see, I had a track meet after school and needed to have food ready for the people at home (just three were at home). Well, I chose this because of the ingredients- all on hand, the title-we have some picky eaters as well, and the time- for I was short on time (needed to get to school!). So yeah, I am back from the meet (7:19 mile- okay I guess) and had some of it. I liked it a lot! The veggies were still nice and flavorful; not all soggy and salty. Everything blended nicely. I was so happy to find that I had some of the diced tomatoes that were already seasoned (some garlic stuff) on hand. Well, it turned out great! It served around 6 people. Thanks for sharing!
     
  4. Thanks for posting Nurslinda! It is part soup, part chili, part stew and part pasta. The whole group enjoyed it and had seconds. It had lots of veggies and we used ground turkey to make it healthier. It made a lot so even with seconds taken there are leftovers. Enjoy! ChefDLH
