- 6 cups water
- 2 lbs shrimp
- 1 onion, sliced into rings
- 2 1⁄4 ounces capers, drained
- 3 bay leaves
- 1 cup vegetable oil
- 3⁄4 cup water
- 1⁄4 cup lemon juice
- 2 1⁄2 teaspoons celery seeds
- 1 1⁄2 teaspoons salt
- 1 teaspoon white sugar
- 1⁄4 teaspoon Tabasco sauce
directions
- Boil Shrimp.
- Drain well and rinse in cold water, and peel and de-vein.
- Place 1/2 shrimp in large bowl. Cover with 1/2 the onion rings, and 1/2 the capers.
- Repeat layering of shrimp, onion, and capers.
- Top with bay leaves.
- Combine all other ingredients, using a whisk to incorporate.
- Pour marinade over shrimp. Cover tightly, and chill for at least 8 hours.
- To serve, drain well and remove bay leaves.
