Pickled Peppers

4 quarts
ingredients
- green peppers or red pepper

To be divided into each of 4 quart jars:
- 4 teaspoons salt
- 4 tablespoons oil
- 4 cups vinegar
- 4 cups water
- 3 cups white sugar
directions
- Wash peppers.
- Take seeds out and cut into strips.
- Boil in water for 5 minutes.
- Drain and pack into quart jars.
- To the top of each quart add salt and oil.
- Bring vinegar, water and sugar to boil.
- Pour this hot liquid over peppers in jars and seal.

My husband and I have lived in NJ for the last 28 years. We have 2 sons, both grown and no longer living at home, only one toy fox terrior dog now, 2 parakeets and 2 finches!
