Pickled Hot Dogs or Sausages

Posted in response to a recipe request. Several years ago, my husband used to make these a lot. He must have gotten his fill, though. He only pulls out the recipe for his "manly" fishing trips, now. :) Cook time does not include overnight refrigeration.

WOW! These are real man food! I cater for a small group of men once a month for a poker game. I just make what they want and drop it off...there is always a nice check waiting for me. Anyway, I made these and oh my gosh...if they weren't gone in a flash! To improve: More vinegar!!! More spices!! And finally use a variety for meats! I used hot dogs, ring bologna, and pencil smoked sausage. I also used more than one kind of peper too. Hatch Peppers, Banana Pepper, and a piece of Sweet bell pepper. Wow! Make these then make it again better!! This is a good base to start and then go where you want.

  1. Boil all ingredients (including hot dogs) together.
  2. Put in jar and refrigerate overnight.
  3. Store in refrigerator.
  4. Can also use smoked sausages, deer sausages, ring bologna, and other types of pre-cooked smoked meats.
  5. Also suitable for pickled eggs.
  6. Serve chunks of pickled hot dogs or sausage with saltine crackers for a snack.
