From Gramma's recipe collection. A twist on meatloaf. You can use spicier sauce if you like a bigger kick. The recipe calls for carrots, but as a kid I never knew they were there and Gramma assures me they were, so if you want your kids to eat more veggies, I suppose this is a good way to sneak them in! When I make it, I sometimes add salsa that contains black beans and corn to the loaf ingredients.

Ingredients Nutrition

  • 1 lb ground chuck
  • 23 cup breadcrumbs
  • 12 cup chopped onion
  • 14 cup coarsely chopped carrot
  • 2 egg whites
  • 14 teaspoon salt
  • 14 teaspoon rubbed sage
  • 14 teaspoon pepper
  • 12 cup picante sauce

Directions

  1. Combine first 8 ingredients. Shape into a loaf and place on a rack coated with cooking spray. Place rack in a shallow roasting pan.
  2. Bake at 400°F for 35 minutes. Brush picante sauce over loaf. Bake an additional 5 minutes. Let stand 5 minutes before slicing.

We loved this meatloaf! The vegetables and seasonings are wonderful, making for a very flavourful and moist meatloaf. The aroma as it was baking was out of this world! I like the picante sauce on top but the meatloaf would be just as good without it. I used about 1 1/4 pounds of ground beef and grated the carrot. Excellent! Made for PAC 2008.

This recipe was fantastic! I am by no means a meatloaf lover but was won over by this meal.<br/>My wife went back for seconds and she does not like picante/salsa!<br/>Simple, tasty and highly recommend.<br/>I followed the recipe as printed.<br/>I cooked mine in a cast iron skillet in the oven.
