A simple open-faced sandwich from Cooking Light.

  1. Heat oil in a nonstick skillet over medium heat.
  2. Add onion; cook 10 minutes, stirring frequently.
  3. Add bell pepper and black pepper; cook 3 minutes or until bell pepper is crisp-tender.
  4. Coat top sides of bread with cooking spray.
  5. Top each slice with 2 ounces beef, 1/4 cup onion mixture, and 1 cheese slice.
  6. Place sandwiches on a baking sheet coated with cooking spray; broil 2 minutes or until cheese melts.
  7. Note: These are open-faced sandwiches, but you can top with bread slices to make them a 'standard' sandwich.

This made a very filling and wonderfully easy dinner! I used a whole wheat hoagie bun in place of the french bread and sprinkled montreal steak seasoning on the peppers and onions while sauteing. Served with raw veggies and a horseradish mayo. Thank you for sharing the recipe!

Easy-peasy dinner recipe for sure! I used leftover grilled flank steak in place of the deli beef and just sliced it very thin. Loved it being open-faced as it allowed me to really taste the flavors of the cheese, peppers, onions and meat without filling me up with bread. Quick and simple and I know this will be something I'll make more often for the family. One little thing is I think I'll toast the bread a bit before adding the items on top - the bread got a little soggy this go round but still not enough that would cause me to not gobble it all down. I made just as posted, except I used thinly sliced grilled flank steak, since I had some ready and perfect for these sandwiches! Only think I might change is to toast the bread just a bit before adding the toppings so that it is a bit crisper. This was a wonderfully easy, delicious dinner. Thanks for sharing!
