- 1⁄2 lb rice noodles
- 3 tablespoons Thai chiles, minced
- 3 tablespoons garlic, minced
- 3 tablespoons fresh ginger, minced
- 1⁄4 cup fish sauce
- 1⁄4 cup sugar
- 2 tablespoons sugar
- 1⁄4 cup rice vinegar
- 2 tablespoons fish sauce
- 1 teaspoon paprika
- 1⁄2 1/2 lb chicken meat or 1/2 lb tofu, diced
- 2 eggs
- 1⁄2 lb bean sprouts
- 4 -5 green onions, sliced
- 1 carrot, shaved with peeler
- 1⁄2 cup peanuts, pounded fine
- 1 lime, sliced
directions
- Boil rice noodle for 10 min., drain.
- Fry chili, garlic and ginger in wok.
- add protein and cook until done.
- add rice noodles and mix.
- Mix sauce ingredients together, add to wok.
- Slip eggs under simmering sauce and noodles, cook until done.
- Add sprouts and green onions, mix well.
- Garnish with shaved carrots, peanuts and sliced lime.
