This is my Mom's recipe and it is loved by family and friends, even the kids love this one.
- 1 lb fresh okra or 1 (18 ounce) bag frozen cut okra
- 1⁄2 cup onion (chopped)
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 large egg
- 1⁄2 cup water
- 1 teaspoon baking powder
- 1 pinch garlic powder (potional)
- 1⁄2 cup flour
- 1⁄2 cup cornmeal
- oil (for frying)
- Combine cut okra, onion, salt, pepper, water and egg. Mix well. Combine flour, baking powder, cornmeal and garlic powder. Add to okra mixture, stirring well. Drop about 1/4 cup portions into about 1/2" hot oil. Fry over medium heat until well browned on both sides. Drain on paper towels.
This is a delicious blending of fried okra and a moist corn muffin!! I loved these!! They would go great with a stew or cajun dish. I used grapeseed oil for frying and 1/8 tsp garlic powder. Thanks so much for posting!!!
Delicious! They're good hot or cold and all I had was a bag of frozen okra to use. Definitely going to make them again.
Really yummy. Mine didn't come out looking quite as pretty as the pictures already posted, but they were delicious (and I'm not even a huge okra fan). So glad I came across this recipe.
