ingredients
- olive oil, for brushing
- ready made pesto sauce (I like the refrigerated brands)
- feta cheese or goat cheese
- 2 thinly sliced plum tomatoes
- 2 -3 garlic cloves, minced
- 1⁄2 cup chopped walnuts
- 1 1 large any other desired bread or 1 large pastry dough, crust
directions
- Brush crust with olive oil.
- Spread pesto sauce on crust leaving just the edges.
- Spread garlic around, place tomato slices on, crumble cheese over it (or place if soft goat cheese), and then walnuts.
- Bake at 375°F for about 15 minutes or until cheese starts to brown.

I had just made my first batch of pesto and was looking for something to use it for....ohmigosh! This was so good! Had a girlfriend over for lunch, and she loved it, so did my husband! I used the mozarella because that's what I had on hand, and added some slivers of mild green peppers from the garden, Fast, easy, delicious!

Dh went nuts. Probably because he realized even he could make these and they're very flavorful, all our favorite toppings. It never occurred to me to use bread as a pizza crust. I sent dh into town for a round loaf of sourdough and had him ask the lady in the store bakery to slice it horizontally. How easy is that? It made a light, crunchy crust. It will be many Saturdays before I make pizza crust from scratch again. Thanks!

I had a Liver transplant Sept 21, 2001 that was very sucessful. It was a happy time when I was back to cooking more often. Actually getting back to living more often!!! I love cooking for large groups which is rare these days. Cooking is great therapy. I cook even when no one is hungry and I have to save it for later!
I LOVE cookbooks. Just about any kind. I end up with a stack of them next to my bed because I browse through them before I go to sleep looking for ideas for the next day or so.
