Pesto Pita Bruschetta - 2 Ways

ingredients
- 1 pita bread round
- 4.92 ml prepared pesto sauce
- 4.92 ml mayonnaise or 4.92 ml cream cheese spread
- 1 tomatoes, thinly sliced or 118.29 ml chopped grape tomatoes
- 29.58 ml fresh parmesan cheese, grated
directions
- Combine the pesto & mayonnaise or pesto & cream cheese. ( I do this on the pita to save on dishes).
- Place or sprinkle tomatoes on top and then sprinkle with parmesan cheese.
- Place under you griller or broiler and cook until pitas are slightly crisp & cheese is melted.

We really enjoyed this for a light dinner. It's a great use for in season tomatoes. I used about a half of a fresh tomato. I took your suggestion and used a wedge of laughing cow cheese. My pita was a little bit soggy. Might have been because it wasn't completely thawed. Might try to toast it a bit first before adding toppings. Thanks for sharing.

Outstanding! Made for a very quick and FLAVORFUL lunch today using a Laughing Cow cheese wedge and 1t pesto. I diced and seeded a roma tomato to top it off with and really I can't say enough about the taste (I was using a great flavorful pesto).... I just kept saying "I had the greatest lunch today" and it really was. Thanks so much for posting; I will be making this often as I always have pita's around! Made for ZWT4.

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa.
Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks.
As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
