We really enjoyed this for a light dinner. It's a great use for in season tomatoes. I used about a half of a fresh tomato. I took your suggestion and used a wedge of laughing cow cheese. My pita was a little bit soggy. Might have been because it wasn't completely thawed. Might try to toast it a bit first before adding toppings. Thanks for sharing.

I used mayonnaise and it gave a very good taste mixed with the pesto. I sliced my tomato but another time I'll dice it. Instead of parmesan, I used grated mozzarella cheese. Thanks Mandy. It was yummy. Made for the Babes of ZWT4

Outstanding! Made for a very quick and FLAVORFUL lunch today using a Laughing Cow cheese wedge and 1t pesto. I diced and seeded a roma tomato to top it off with and really I can't say enough about the taste (I was using a great flavorful pesto).... I just kept saying "I had the greatest lunch today" and it really was. Thanks so much for posting; I will be making this often as I always have pita's around! Made for ZWT4.

Delicious and so easy. I used the triangle cheese as suggested along with sliced mini Roma tomatoes. I made 2, as it was my dinner. :)

Very yummy, I used one tablespoon pesto sauce and one tablespoon of cream cheese spread (I had a very large pita bread) so I wanted to spread it thickly. Perfect for a quick lunch. Thank you Mandy from Oz
