Made this for dinner tonight. I didn't have time to fix it in the crock pot, so I simmered it on the stove top. We all felt like the recipe was missing something. I plan to make the recipe again however; I will play with it a bit and see if we come up with something more to our liking. It is a good base recipe though, and can easily be added to. This was ok, but a bit too much like a herby soup for my liking. My family ate it though.

We loved this. I must confess, I ran out of time and wasn't able to use my crock pot and it was done and delicious in just under two hours on the stove. I served it with "Three Corn and Cheddar Spoon Bread" and it was the perfect, easy mid-week vegetarian supper.
This was delicious, we make home-made pesto sauce which was a great touch! Would definitely recommend to a friend
