This lovely salmon recipe is from Australian magazine Super Food Ideas, May 2006 - Any pesto can be used but it is really lovely with special pesto recipe Spinach, Rocket and Macadamia Pesto #415030.

Ingredients Nutrition

  • 2 cups breadcrumbs, fresh
  • 12 cup pesto sauce, spinach, rocket and macadamia pesto
  • 1 tablespoon salt, sea
  • 4 salmon steaks, skin on and bones removed

Directions

  1. Preheat oven to 200degC (400degF) and line a 6cm deep, 20cm x 28cm (base) baking dish with baking paper.
  2. Combine breadcrumbs, pesto and salt in a bowl. Place salmon skin side down in prepared dish. Sprinkle 1/2 cup crumb mixture over top of each, pressing on lightly with fingertips.
  3. Bake for 15 to 20 minutes, depending on thickness, or until cooked to your liking.
  4. This is nice served with broccolini and lemon wedges.
  5. NB: To make 2 cups fresh breadcrumbs, place 4 slices day old bread, crusts on, in a food processor and process into crumbs.
