Light and fresh as well as so easy to prepare! It tastes like you spent hours on it, but takes just minutes!
- 1 cup cooked chicken breast, cubed
- 1 cup celery, chopped
- 1 cup tomatoes, chopped
- 1⁄2 cup onion, chopped
- 1⁄2 cup purchased pesto sauce (found in refrigerated section of supermarkets)
- Combine all ingredients in a large bowl and mix well.
- Serve with your choice of bread, bagel, pita, or wrap.
This is very good. I had rotisseried a chicken last night so this recipe was perfect to use up the leftover chicken. I made my own pesto which made for a very fresh tasting salad. As the other reviewer wrote, this is perfect for a summer supper. Thanks for the recipe.
Yummy! I've been holding this recipe forever and finally made it last night. Wow, is it good. I used the breast of a fresh rotisserie chicken and a pesto sauce that also had basil in it. I left out the tomatoes since the husband doesn't like them, but made a side tomato salad for myself. I doubled the recipe to have for lunch today, but we ate it all last night! Served it in warm pita bread. Thank you so much for sharing a super-easy summer supper recipe!
