  1. Prepare pesto sauce using olive oil per package directions.
  2. Heat oven to 350 degrees.
  3. Spray 9 x 12 inch glass dish with non-stick spray.
  4. Moisten chicken with water, shake off excess and coat with gluten free bread crumbs.
  5. Place chicken in baking dish, cover and bake for 20 minutes.
  6. Remove chicken from oven and spread pesto sauce evenly over breasts.
  7. Cover each breast with 1/2 slice of provolone cheese.
  8. Spread mushrooms over cheese.
  9. Place chicken back in oven for 25-30 minutes until done.
  10. Freeze two breasts in a quart size zip lock bag.
  11. To reheat: Thaw in refrigerator overnight. Heat in oven or microwave.
