I have been told this is a staple at the dinner table in Peru.
- 1 garlic clove, mashed
- 2 tablespoons olive oil
- 4 cups water
- 2 tablespoons lemon juice
- 1⁄2 teaspoon salt
- 2 cups long-grain white rice
- Wash and drain rice.
- Saute garlic in oil for a minute or two.
- Add water, lemon juice and salt.
- Bring to a boil.
- Gradually add rice.
- Cover and simmer 20-30 minutes.
Made this to serve as a side to recipe#364352 and you are right, taste like the rice we enjoyed while traveling through Peru and brought back wonderful memories. The only thing I did different was use chicken stock instead of plain water.
Thank you for sharing this lovely rice. My very picky dh loved it. A lovely rice with subtle garlic and lemon flavors. It was perfect served with the bbq pork and carrotes. Complimented the main dish perfectly. It was quick and easy to make. I will make this again. :)
