      Made half the amount with left over potatoes. Nice mix of veggies. The nuts brought this to en other level for us. Thanks. Made for ZWT 2011

      Nice additions to basic home fries. Good nutrition, with the C and other vitamin in the peppers, protein from peanuts, and calcium from cheese. Use reduced fat cheese if fat is a concern. Be careful not to overboil the potato cubes (unless you want peruvian mashed potatoes, which are good, too.)

      I love home fries, so I knew these would hit the spot. The chilis (which we reduced) and peanuts lend something different and very nice to the recipe. We reduced the oil and salt, and omitted the cheese (personal preference). Good solid dish.

      I fell in love with Peruvian cuisine on a trip there in 1978; I'm so pleased that more people are discovering it. I love the peppers and onions in this. The lemon juice doesn't make them really lemony, but it adds a certain delightful mystery to the taste. I also topped them with a few chopped olives, which are also traditional. This is a delicious take on home fries. Thanks for posting!
