I bet these would be even better if I followed your directions! I used a mixture of tomato sauce and salsa since I didn't have fresh tomatoes. I cooked the eggs until they were hard since I wasn't sure what to do. I think they might be better if they were soft. Thanks!

This made for a delicious and pretty healthy breakfast. I cut the recipe down to serve one egg. Normally I eat my eggs with toast, but there was no need for that with the yummy tomato and onion mixture! Thank you. :)

A yummy way to fix eggs. I made this using one egg and enjoyed it for breakfast. Thanks Toni! Made for the Sun and Spice event in the NAME forum.

This is awesome! I didn't have tomatoes or fresh chives on hand, so I used canned diced tomatoes and dried chives from the spice rack. I also added about 1/4 tsp of Cumin to the sauce. Went really well with it. I didn't have any fancy bread so I just threw two pieces of white bread into the toaster and then served the mixture over that. Really easy, really good and very filling. Also really cheap.... good for all those other college students out there like me.
