These yummy cookies were always a favorite growing up. Taken from the Joy of Cooking, my mom used to make these harder by adding extra flour. For a softer, chewier cookie, use the amount noted in the recipe.
- 118.29 ml butter
- 118.29 ml brown sugar (firmly packed)
- 118.29 ml sugar
- 1 egg
- 236.59 ml peanut butter
- 2.46 ml salt
- 2.46 ml baking soda
- 2.46 ml vanilla
- 354.88 ml flour
- Mix butter and sugars together using a hand mixer. Add in all remaining ingredients and mix until combined.
- Roll the dough into small 1 inch balls and place on cookie sheet. Squish to about 1/4 inch thick using a fork.
- Bake for 10 minutes at 375 degrees. Enjoy!
These cookies are good! I got 48. Next time I will try rolling the balls in sugar.
I made these today. I only got 38 small cookies, but the flavour was great. The peanut butter craving was exceptionaly satisfied. Thanx for a fun recipe.
