Well, I wanted something pudding-y to eat with organic strawberries, so I tried a few variations to my usual tofu "yogurt"... ta-da! A fruit-dipping delight!
- 1 (12 1/3 ounce) packagemori-nu firm silken tofu, crumbled
- 1 small banana, very ripe
- 1 tablespoon apple juice concentrate, thawed
- 1 tablespoon sugar (3-4 tsp)
- 2 tablespoons hot water
- 2 teaspoons vanilla extract
