- Simmer 20 minutes heat, let set 20 minutes off heat.
This rice came out very nicely, but the directions could be a little more specific. I used chicken broth, which I brought to a boil. I then stirred in the rice, covered, and reduced the heat. I then followed the instructions to simmer for 20 minutes, then sit for 20 minutes. I also added a pinch of thyme, salt, and pepper to the broth before adding the rice, which I think gave it a wonderful flavor. All in all, the rice did come out perfectly. Made for Spring PAC 2012.
