This is the same recipe I use (although I make it in a food processor, so use a little different mixing method, but same basic recipe). I love this crust - crispy on the bottom and just slightly chewy. Just made pizza again tonight, and it always turns out perfect. I do it on 500 degrees convection bake with the stone on the floor of the oven, but it only takes 5-6 minutes for mine rather than the 7-8 minutes.
